Organic coconut sugar is derived from the nectar in the fruit and bark of the coconut palm (Cocos nucifera). It is a golden-brown, crystalline sweetener often considered a nutritious alternative for brown sugar.  It is produced by heating the nectar, or palm sap, to remove its water content. Once dehydrated, the remaining substance is granulated until it resembles the coconut sugar we all know and love.
